Summer of Tomatoes & Basil

After a wonderful time with family in the woods, playing in streams and lakes, hiking and climbing, it felt as though we hit the ground running. Labor Day is almost upon us, school forms are due, and we pulled out the fleece jackets to face the cool mornings of a fall, which is fast approaching.

In honor of fall we made a new flavor of chicken sausage. For some of you who have known us for many years, this is a throwback from our first try at chicken sausage back in 2017. A consistent inspiration for me when it comes to sausage making (and cooking in general) is what fresh ingredients are on hand. The end of August is a time of summer bounty in the Adirondacks and across the north east. So I thought to myself, what is a flavor of summer? Tomatoes and basil!
So we gathered some organic Roma Tomatoes and fresh basil from our friends at Juniper Hill Farm and set out to make some sausage. I was also inspired by lots of feedback and questions on when we were going to try a linked sausage for our chicken sausage? Racey roller her eyes, of course Nathan is experimenting with every aspect: new flavor, and linking! So away we went.
We are so proud to offer our Chicken Tomato Basil Sausage Links. These links are amazing on the grill or in the skillet. They are made from local, organic and fresh ingredients: sea salt, organic fresh garlic, organic black pepper, organic fresh tomatoes, and red wine vinegar. As with all things we welcome your feedback; and the beauty of making our own chicken sausages in-house is that we can adjust recipes and make changes. Please try some and let us know what you think.
I hope you find a smile as you appreciate our learning and inconsistencies. Linking a sausage is an art and we have a small 6 lb sausage stuffer and only our inexperienced and out of practice hands. We tried for the perfect ¼ lb link, creating the classic 1 lb package with 4 links. Instead we got varied link length and weight. We played some mix and match to try for packages that came close to 1 lb. Some packages have 3 links where our links got “heavy”… Our kids call them super links!

Chickens On the Ferry!
Thank you to our friends at Maple Wind Farm. Thank you to Otis and Sophie for the late night “chicken party” where we sorted and crated 350 birds to have ready to catch the 6:30 ferry the next morning. Here is a picture of 350 chickens on the Essex-Charlotte Ferry with a beautiful sunrise.
