Each package contains one or two petit tender steaks—a rare and delicious cut from the shoulder, known for its tenderness and beefy flavor. It’s often compared to filet mignon, but with more character and at a better value.
Steaks average 0.4 lbs and come frozen, ready to ship to your doorstep.
Our cattle are raised entirely on pasture and 100% grass-fed and finished, with no grain, ever. They graze freely on fresh grass and forage from spring through snowfall on our family farm in the Adirondacks. We also partner with our friends at Asgaard Farm in the Adirondacks and Snug Valley Farm in Vermont to keep our freezers well stocked.
We never use antibiotics, hormones, or GMOs—just rotational grazing and regenerative practices that support soil health and animal wellbeing.

Petit tender steaks are best cooked hot and fast. Sear them in a cast-iron pan or on the grill until medium-rare for the perfect balance of tenderness and flavor. Let rest before slicing against the grain.
Great on its own with just salt and pepper, or serve with a chimichurri, herbed butter, or red wine reduction for a restaurant-quality meal at home.
