The Eye of the Round is naturally lean, so gentle cooking produces the best results:
Slow Roast: Season generously, sear on all sides, then roast at 300°F until it reaches an internal temperature of 145°F. Let rest before slicing.
Pot Roast Style: Braise low and slow with broth, onions, and herbs until fork-tender.
Thin-Sliced: Chill the cooked roast and slice thin for sandwiches, rice bowls, or pan-fried leftovers.
For extra tenderness, you can marinate the roast for a few hours before cooking or braise it with plenty of liquid.
