About Our Pasture-Raised Pork, fed organic grain

Our pigs are raised outdoors on pasture and woodlands at our family farm in the Adirondacks. They root, roam, and forage freely and are supplemented with certified organic grain. We never use antibiotics, hormones, or GMOs.

We raise heritage-breed pigs known for their well-marbled meat and exceptional flavor.

Preparation Tips

The bone-in pork chop is known for its great texture and complex flavor profile. It is a wholly unique experience that grilling enthusiasts won't want to miss.This delicious cut comes from the loin of the pig, which is why it is so tender. Meat from the loin or rib is often the most tender, and having the bone left in makes it all that more juicy and flavorful. 

The key to preserving the tender and juicy nature of the pork chop is just the right amount of cook time! Beware the over cook! As our dear friend Cory likes to say "just give it the 'ole finger poke test" which is surprisingly effective. Once you get a fell for it, you can tell the doneness of meat with a quick poke of the finger. Start by poking the raw meat and poke it every minute to get a feel for how the texture changes in feel. Soon you'll be a grilling master.

For the juiciest, most flavorful pork chops, start by thawing them fully in the refrigerator. Pat them dry to help achieve a beautiful sear.

Bone-in chops do best with a quick, hot sear, followed by gentle finishing:

  • Pan-Sear + Oven Finish: Season generously with salt, pepper, and your favorite herbs. Sear in a hot skillet for 2–3 minutes per side, then transfer to a 375°F oven until the internal temperature reaches 145°F. Rest 5 minutes before serving.

  • Grill: Grill over medium-high heat, turning occasionally, until nicely charred and cooked to 145°F.

  • Brining Option: For extra tenderness, brine in salt water (¼ cup salt per quart of water) for 30 minutes to 2 hours before cooking.

Because the bone helps retain moisture, these chops stay tender and flavorful—just be careful not to overcook. Enjoy that deep, pasture-raised pork taste!
