We are really excited about this sausage. Most smoked sausages contain either Sodium Nitrate or Celery Powder both of which contain sodium nitrate. This sausage is uncured but smoked, so it does not contain any nitrates, synthetic or naturally occuring.
Originated in France, andouille is commonly used as an ingredient in making several classic Cajun dishes. Its signature smoky flavor can be used in etouffee, gumbo, jambalaya or fried and crumbled over red beans and rice.
Our pork is always raised on pasture and fed only Certified Organic Grain. They are never given any antibiotics or hormones, just sunshine and fresh air.
