Our roasts vary by weight, when you check out you will see an ESTIMATED price based on the average weight of our roasts. We will bill you based on the final weight of the roast we send you. One pro tip I love is to tie up the ends of the roast. The tenderloin has a "tail" where the muscle tapers off, if you tie this piece back on itself, like I did in the picture, you get a more even cooking and avoid overcooking the tail.
