Rendered from fat found near the organs, this pure white, odorless cooking and baking fat is to die for! The perfect lard for pie making. Leaf lard is more saturated and therefore harder and more crystalline in texture (which makes it easier to cut into flour).
A double pie crust uses between 5 - 8 oz of lard depending on how much butter (or none at all) you're including.
