Each package contains a rack of lamb rib roast with 8 ribs, one of the most tender and elegant cuts of lamb. With beautiful marbling and delicate flavor, this roast makes a stunning centerpiece for special meals while still being simple to cook.
Packages average 1.7 lbs. They are frozen and ready to ship to your doorstep.
Our lambs are raised entirely on pasture and 100% grass-fed and finished, with no grain, ever. They graze freely on fresh grass and forage from spring through snowfall on our family farm in the Adirondacks. We partner with our friends at Kinderhook Farm in Valatie, NY and Barred Owl Brook Farm and Essex Farm right here in Essex to keep our freezers well stocked.
We never use antibiotics, hormones, or GMOs—just rotational grazing and organic practices that support soil health and animal wellbeing.
Rack of lamb cooks quickly and is best served medium-rare to medium.
• Roast: Season with salt, pepper, garlic, and herbs, then roast at 400°F for about 20–25 minutes until the internal temperature reaches 125–130°F.
• Herb Crust: Coat with Dijon mustard and a mixture of breadcrumbs, garlic, and herbs before roasting for a classic preparation.
• Reverse Sear: Roast gently first, then finish in a hot pan or under the broiler to develop a crisp, flavorful crust.
Pro tip: Let the roast rest for 10 minutes before slicing between the ribs to keep the meat juicy and tender.
