Each package contains 1 whole heritage chicken from our certified organic, pasture-raised flock. Heritage breeds are slower growing than conventional broilers, and that slower growth is what gives this bird its rich, traditional flavor.
Whole chickens range from 3 to 4 lbs, averaging 3.4 lbs. They are vacuum sealed and frozen for freshness, with the neck left on; organs are sold separately.
Our Heritage Chicken is a slow growing breed, prized for its exceptional flavor and firm, satisfying texture. Like all of our poultry, these birds are certified organic and pasture raised; once their feathers and bodies are ready, typically around three weeks of age, they move out to our fields, where they live in portable coops that we move to fresh pasture every day. This daily rotation gives them access to living grass, insects, and clean ground throughout their lives.
We think all of our chicken tastes great; this one might be our best yet.

A whole heritage chicken is excellent for roasting, and its firmer texture also holds up beautifully to slow cooking methods like braising or simmering for stock. For best results, thaw completely before cooking.
Because heritage birds are more active on pasture, we recommend cooking low and slow to bring out their full flavor and tenderness.
