Our cattle are raised entirely on pasture and 100% grass-fed and finished, with no grain, ever. They graze freely on fresh grass and forage from spring through snowfall on our family farm in the Adirondacks. We also partner with our friends at Asgaard Farm in the Adirondacks and Snug Valley Farm in Vermont to keep our freezers well stocked.
We never use antibiotics, hormones, or GMOs—just rotational grazing and regenerative practices that support soil health and animal wellbeing.

Hanger steak is a cut of beef steak prized for it's rich flavor. It is perfect for marinating, and is wonderful to broil or grill. Best served rare / medium-rare. This cut of beef is great if you love artisan cuts and want to try cooking with a new kind of steak. In terms of flavor and texture, it is comparable to flank steak.
Did you know...the hanger steak is so flavorful, that it was previously known as "butcher's steak", because butchers would often prefer to keep it for themselves rather than sell it. When slaughtering our own animals on the farm we've often eaten this steak the same day the animal is slaughtered!
