Chorizo is one of those flavors that can have many interpretations. We've tried a few different spice recipes and sausage makers over time. Some went too heavy on the cinamon, some were too spicy, some not enough cumin. After thorough research, testing and consideration we are pleased to offer what we think is the finest of the bunch. Just the right authentic mexican spices, spicy, but not enough to make you sweat and great texture.
Our pork is always raised on pasture and fed only Certified Organic Grain. They are never given any antibiotics or hormones, just sunshine and fresh air.
