About Our Pasture Raised Organic Chicken

Our chickens are raised on pasture at our family farm in the Adirondacks. We feed them certified organic grain, never give them antibiotics or hormones, and process them on-farm. We raise slower-growing breeds from Freedom Ranger Hatchery for better flavor and nutrition. Read more about our practices. 

Preparation Tips

Chicken drumsticks are versatile and kid-friendly. For crispy skin, pat them dry before seasoning or applying your favorite rub. Bake at high heat, throw them on the grill, or marinate overnight for extra flavor. They also work beautifully in soups and braises where the bone-in cut adds depth to the broth.

Easy Baked or Grilled Chicken Drumsticks (or Wings)

This is our go-to weeknight recipe—quick, flavorful, and always a hit. We keep a jar of this dry rub on hand so we can throw it together in minutes!

Ingredients (for ~4 lbs of drumsticks or wings):

  • 1 tablespoon ground black pepper

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 2 teaspoons coarse salt

  • 2 teaspoons dried thyme

  • ½ teaspoon cayenne pepper (optional – leave out for a kid-friendly version)

  • ¼ cup lemon juice

  • ¼ cup butter

Instructions:

  1. Preheat your oven to 450°F or get your grill hot and ready.

  2. Make the dry rub by combining pepper, garlic powder, onion powder, salt, thyme, and cayenne (if using) in a small bowl.

  3. Rub the seasoning blend evenly over about 4 pounds of chicken drumsticks or wings (roughly 4 packages).

  4. Melt ¼ cup of butter in a small saucepan or microwave. While it’s melting, pour ¼ cup lemon juice over the seasoned chicken.

  5. Add the melted butter to the chicken and toss everything well to coat evenly.

  6. Cook the chicken:

    • Oven: Bake at 450°F for 35–40 minutes, turning once, until the skin is crispy and the meat is cooked through (internal temp of 165°F).

    • Grill: Grill over medium-high heat, turning occasionally, for 20–25 minutes until golden and fully cooked.

Tip: Mix up a larger batch of the dry rub and store it in a pint jar for quick, no-fuss dinners anytime!
