Lamb Breast Dutch Oven Recipe
Lamb breast is one of the most flavorful and economical cuts of lamb. Slow-cooked in a Dutch oven with onions, potatoes, and simple seasoning, it becomes tender, rich, and deeply satisfying. This is a reliable, low-effort meal that fits well into a winter kitchen rhythm.

Ingredients

  • 1 whole lamb breast, about 2.5 to 3.5 pounds
  • 2 to 3 onions, cubed
  • 1 1/2 to 2 pounds whole potatoes
  • 2 to 3 teaspoons salt
  • 1 teaspoon black pepper
  • 1 to 2 teaspoons rosemary, dried or fresh
  • 1/2 cup water

Instructions

  1. Preheat oven to 300°F.
  2. Place the lamb breast in a Dutch oven. Arrange the cubed onions and whole potatoes around and underneath the meat.
  3. Season evenly with salt, black pepper, and rosemary.
  4. Pour about 1/2 cup of water into the bottom of the pot. The liquid should not cover the meat. It should just create moisture for braising.
  5. Cover with a lid and cook for 2 1/2 to 3 hours, until the meat is tender and the bones pull free easily.
  6. Serve as a one-pot meal, or separate into pulled lamb, onions, and potatoes for easy meals throughout the week.

Notes

Lamb breast contains a generous amount of fat, which renders during cooking and adds flavor to the dish.

If you prefer a slightly crisp finish, remove the lid for the final 20 to 30 minutes of cooking.

Leftovers work well in burritos, hash, or simple reheated meals later in the week.
