This has been an ongoing project for a few weeks now and the culmination of over a year of thinking and wondering. We have some close friends from Jamaica and we all love jerk chicken, but could we make a jerk chicken sausage? After quite a few test batches we found it and we are proud and excited to share it with you.
What is "jerk"? I like to think of it like the word curry. Curry is a blend of spices, which has a recognizable flavor profile. If you ask any two chefs for a curry recipe, you'll get a different answer. Jerk is the same.
Beautiful savory and aromatic notes, with a hint of smoky spice this sausage is an instant favorite in our house. Our kids (6 and 9) say "ooh yum, it is a bit spicy but that's ok..." I would call it medium spicy.
Please note: our scale did not print the full ingredients list on the labels on each package. We have listed the ingredients here and have corrected the problem.
Our chickens are Pasture Raised Organic. That means we never use antibiotics or hormones, and we feed only organic grain. Our chickens are also always outside, on pasture with daily moves and ample room to be a chicken.
